Giving Back...

Well, so many people have helped me by giving me recipes to help me out in the kitchen. Anybody that knows me knows that "I have a kitchen because it came with the house". I wish I cooked, but I just don't. I'm apparently scared of trying. However, on very seldom occasions I will tackle the task anyway.
I'm going to post this recipe that I found in a magazine. I've made it a few times including last night. Dave and I both enjoy it!

Pepperoni Lasagna Roll-Ups

Ingredients:
3 lasagna noodles
3/4 C ricotta cheese
1/2 tsp minched chives
1/2 tsp dried oregano (I use 1/4 tsp because that is just too strong)
1/2 tsp dried basil
24 slices pepperoni
3 slices swiss cheese cut into thirds
1 C meatless spaghetti sauce
1/4 C shredded Parmesan cheese

Directions:
Cook noodles according to package directions; drain
Combine Ricotta cheese, chives, oregano, and basil. Spread 1/4 C over each noodle to within 1/2 inch of edges. Top with pepperoni and swiss cheese. Carefully roll up (jelly roll style) and place seem side down in a greased shallow 1 qt baking dish. Top with spaghetti sauce. Cover and bake (oops...I forgot to cover it. Probably made a mess in my oven. Oh well. It probably won't be used again for awhile. J/K) at 350 degrees for 20-25 min or until bubbly. Uncover and sprinkle with parmesan cheese. Bake additional 5 minutes or until cheese is melted. Let stand 5 minutes before serving.

I just saw that myself in the Food and Family magazine and was intrigued. I am a sucker for anything Italian!
